Pomegranate Avocado Salsa

Pomegranates are big in our house. The girls eat the seeds by the spoonful and packed in their lunch boxes. I love them on yogurt, pancakes, well really on anything. They just make everything sweeter, fresher, and prettier. Like jewelry for food.
When we're busy (which is like, all the time) I love the prepackaged pomegranate seeds. My current favorite thing to do with pomegranate seeds is use them in savory dishes like salads and salsas. This Pomegranate Avocado Salsa is a delicious sweet and tangy compliment to tacos, burgers, quesadillas, or just chips.
This salsa and a glass of Champagne or sparkling apple juice with a few pomegranate seeds would be perfect for New Year's Eve next week.

Pomegranate Avocado Salsa
makes about 2 cups
1 small shallot, chopped
1 large avocado, diced
juice of one lime
1 tablespoon chopped cilantro
1/2 cup pomegranate arils (seeds)
salt and pepper to taste
*If you like spicy foods, you could add a diced jalapeno to the mix!
Place chopped shallot, avocado, lime, and cilantro in a small bowl and stir to combine. Add pomegranate seeds and season to taste with salt and pepper.
