Heart Shaped Mini Pizzas

 

These little cuties are a bit more labor intensive than one large pizza, but worth the effort for something special for Valentine's Day. Any left over are great for lunchboxes the next day.

Heart Shaped Mini Pizzas

1 large pizza dough

1 cup pizza sauce 

1 ball fresh mozzarella, sliced

1/4 cup finely grated Parmesan cheese

basil leaves for garnish

Special equipment: medium or large heart shaped cookie cutter

Preheat oven as high as it goes (550 degrees F on mine). Also preheat pizza stone/brick if you have one. 

Roll dough into a large disk, okay really it does not matter what shape it is! Use a cookie cutter to cut heart shapes from dough. Transfer hearts to a piece of parchment paper approximately the size of your pizza stone or cookie sheet. You are doing this step because transferring all the hearts directly to the stone is very tricky and they will likely lose their shape. Top with sauce, then cheeses. Transfer parchment paper to pizza brick or cookie sheet and bake until cheese is bubbly and crust is golden brown and cooked through, about 10 minutes. Top with basil leaves.
